Ciao tutti. During this special online Christmas cooking workshop, Chef Fabiana Eramo will introduce you to the traditional vegan cuisine of the Alta Tuscia in Northern Lazio. The Italian recipes come from her book Tuscia Slow and I, Mariet Bloemendal, cooked them for you in my Amsterdam kitchen. Step by step I will help you conjure up this delicious menu. Of course we would have preferred to work live with you in Fabina’s kitchen, but due to corona this is unfortunately not possible this year.

Chef Fabiana Eramo, together with her partner Fabiano, has “la casa di eFFe”, a home restaurant in Grotte di Castro. Besides being a chef, Fabiana is the writer of the cookbook Tuscia Slow. In 80 recipes she will take you on a journey through the cooking traditions of the Alta Tuscia.
Fabiana works as a basis with the recipes from traditional Italian cuisine. She edits these into new circular recipes. You taste and see guts and character when you start working with Fabiana.

What are we going to cook?

We’re going to bake an Italian loaf of bread. You learn to make Salsa Verde and Salsa Rosso as an appetizer on the crostini. The story about the origin of aquacotta and how to make this special Christmas aquacotta. Of course you will learn the sweet macaroni dessert with dark chocolate and fresh walnuts. Cooking takes about two hours. The dough needs extra time to rise.
